Using the recipe for Tuscan bread, break off 2 inches pieces and drop a few at a time into about 3 inches of hot olive oil. Do not allow oil to smoke.

Allow to fry until golden.

Remove with slotted spoon and place on paper towel for 1 minute to drain.

Serve hot as finger food with home made Italian sausage and Italian cheese.

May also be served drizzled with honey and a sprinkle of black pepper.

Note: A good extra virgin olive oil to use for this recipe is California Olive Ranch. It qualifies as true extra virgin, but is not as expensive as finishing oils.
