The London branch of the Le Cordon Bleu cooking school created this sandwich filling in 1953 for the coronation of Queen Elizabeth II in London. The ingredients represent the various parts of the British Commonwealth.

1 pound cooked chicken, chopped (about 2 boneless, skinless chicken breasts)

3/4 cups of mayonnaise

1/2 cup mango chutney

3 Tbsp. curry powder

1/4  cup dried apricots, chopped

3 green onions, chopped

1 stalk celery, chopped

1/4 cup slivered almonds

Salt and pepper to taste

20 slices multigrain bread

Combine chicken, mayonnaise, chutney, curry powder, apricots, onions, celery, almonds, salt and pepper. Spread mixture on half the slices of multigrain bread and top each with another slice. Remove crusts and cut each sandwich into four triangles.

Yield: Sandwiches for 10
