Chef Ken Frank from La Toque in Napa reports that the first fresh white truffles arrived last week. "A hot dry summer followed by an unusually warm fall has made for the most challenging season in generations; it started slowly and late," he said. "I was in Piemonte in late October and the truffle quality was still poor. Flavor has finally come around and our first batch has been spectacular. Still, the crop is way down this year and the price is twice anything I have ever seen. Usually, we count on them through Christmas, but this year is just different and I am reluctant to promise them for more than the next few weeks. That said, we will feature them nightly as long as the perfume remains good."
Chef Carlo Zarri, from Cortemillia, will be returning for his sixth annual visit to La Toque on Thursday, Dec. 7. "As always, he’ll be bringing a fragrant suitcase full of truffles, both White Magnatum and Black Uncinatum truffles to feature on his menu of Piemontese specialties for the night."
This guest chef dinner begins with a 6:30 p.m. reception followed by a 7 p.m. dinner seating. The cost for five-course menu is $150 per person with option wine pairings for $68. Call the restaurant to reserve a table.
