CIA chefs preparing dishes at Hestan Teaching Kitchen at the CIA at Copia. 

The following classes will be offered at the CIA at Copia during the week of July 9-15:

— Wednesday, July 11:

Young Chef: Latin Cuisine – Culinary One-day Camp for 10+ – Hestan Kitchen, 9 a.m. to 2:30 p.m., $150

Children (10 and older) or teens can explore the professional kitchen and learn new cooking and baking techniques from CIA chefs in a full-day program of hands-on cooking, chef demonstrations, garden tours and lectures with a focus on Latin cuisine.

All participants must be dropped off at the Hestan Kitchen and signed in by an adult.

At the conclusion of the program, adults must meet participants at the Hestan Kitchen for pick up and sign out.

Featured menu: Homemade Tortillas, Elote, Fried Plantains, Brazilian Cheese Bread, Papusas, Tacos and assorted fresh salsas, Tres Leches Cake, Mexican Wedding Cookies

— Thursday, July 12:

Chef’s Class: CIA Farm to Table – Napa Valley Vintners Theater, noon to 1 p.m., $30

In this chef demonstration, you’ll learn tips, tricks, and techniques to use farmers’ market finds to create meals that are full of flavor, rich in nutrients, and good for your community.

This class, held in partnership with CIA Farm Manager Matthew Gunn, creates seasonal dishes based on what is available in our garden and farm at the CIA.

— Friday, July 13

The Chef’s Table: California Bounty – Napa Valley Vintners Theater, 5:30-7:30 p.m., $150

Gather round the table in the Napa Valley Vintner’s Theater and watch CIA chefs work their magic as you learn great tips and techniques along the way. Ask questions, relax with friends, and enjoy food and beverage pairings. Class instruction will include trimming, cutting, and cooking the perfect steak, tips on cooking seasonally. For ages 18 and older.

— Saturday, July 14

CIA Skills: Healthy Cooking – Hestan Kitchen, 11 a.m. to 2 p.m., $125. In this class, global flavors and fresh, whole foods are your inspiration. You’ll learn healthy cooking techniques to use in preparing a diverse menu of delicious and naturally good-for-you dishes.

This is a small, hands-on class in our Hestan Kitchen concluding with a meal and wine.

Hands-on Class)or ages 18 and older.

Chef’s Class: Asian Fusion Favorites – Napa Valley Vintners Theater, 4–5 p.m., $30

Learn how to perfectly braise and sear pork belly, prepare homemade bao and kimchi, and more in this his demonstration-style class. Featured recipes include: Bao with Seared Braised Pork Belly and Korean Steak Tacos

— Sunday, July 15

Family Funday Special Edition: Copia Garden-to-Table Mac & Cheese – Hestan Kitchen, noon to 1 p.m., $15

Learn ways to reimagine this classic with bold ingredients, and even how to hide the vegetables using ingredients picked fresh from the Copia gardens. It covers healthy options like whole grain pasta, lean protein, or allergy-sensitive modifications and to top it all off, it concludes with a DIY mac & cheese sampling bar.

Fun for ages 4 and older. All children must be accompanied by at least one adult. All adults must be accompanied by at least one child. Parents and guardians are responsible for the supervision and behavior of minors while on a CIA campus or in attendance at a CIA-sponsored event.
