Napa Valley College Upper Valley Campus Library will hold and exchange and sale of cookbooks on Saturday, March 17, 1-4 p.m. Bring cookbooks, of all shapes, sizes, and cuisines, to exchange, or browse the selections for cookbooks to purchase for $1-$5. Baked good from the Napa Valley Cooking School, a program of the the Napa Valley College, will be for sale.

Admission is $10. Proceeds support the scholarship fund for the Napa Valley Cooking School Professional Chefs’ Training Program in partnership with the Napa Valley College Foundation.

The Napa Valley Cooking School attracts students from around the globe to its a fast-paced, intensive training for aspiring chefs. The classes begin in September, covering basic techniques in a number of areas including baking and pastry, and soups, sauces and stocks.

At the end of the first semester students use their new skills to create a restaurant that has become a popular tradition in the valley, serves up to 80 guests a day, and generally booked up far in advance.

After a second semester, studying subjects that include French, Asian, American Regional and Mediterranean cuisines, wine, charcuterie and butchery, students create a second restaurant and then complete 500 externship hours working in restaurants before graduating the following fall.

Students also care for the school’s organic gardens, chickens and bee hives.

The college strives to keep the program affordable for a variety of students, including veterans, and people wanting a career change as well as young people looking to start their culinary career, said Lissa Gibbs, director of the Upper Valley Campus where the school is located.
