Quick and Easy Cherry Cobbler

Serves 6 to 8

1 stick melted butter*

3/4 cup all purpose flour

1 cup granulated sugar

Pinch of salt

2 tsp. baking powder

3/4 cup whole milk

1 jar dark Morello cherries from Trader Joe’s (or canned Montmorency cherries), drained

Preheat oven to 350 degrees.

Melt stick of butter in microwave and pour into deep square baking dish.

In a good-sized bowl, whisk together flour, sugar, baking powder, salt and milk. Pour batter over the butter, but do not stir. Sprinkle drained cherries over the top of the batter, but do not stir.

Bake for 45 minutes to an hour, testing if it’s done by inserting a knife into the center and seeing if it comes out clean. Let rest for 5 minutes or more before serving.

*I’ve experimented with 3/4 of a stick of butter and on occasion have found that I like the lesser quantity of butter best.
