On behalf of Collabria Care, I’d like to express my deepest thanks to Mark Dommen, the incredible chef of One Market Restaurant in San Francisco, for representing Collabria Care in the Hall Cabernet Cook-off on April 23. For the Cook-off he created a pancetta-wrapped Passmore Ranch sturgeon with lentils and blackened garlic that won him first place in the competition and resulted in an $8,500 donation for our organization.
It’s no surprise to us that Mark won the competition. His food provides more than just comfort and nourishment, it provides an experience.
As a Napa resident and long-time Collabria Care supporter, Mark is dedicated to sharing his exceptional culinary skills throughout the valley. Whether it’s to raise money for our organization or a local school, he offers a dining experience often talked about long after the event. Collabria Care has been lucky enough to have been selected for the Cook-off by Mark for three consecutive years. He has placed all three times – and this is his second time winning first place on our behalf.
For those who haven’t had the pleasure of attending the HALL Cabernet Cook-off, it’s an event where local celebrity chef teams compete to create the best dish to pair with HALL Napa Valley cabernet sauvignon.
Vintners Kathryn and Craig Hall ensure the entire afternoon is as wonderful for attendees as it is beneficial to local nonprofit agencies. Each chef competes for a charity of his or her choice and the dishes are judged by qualified experts in the food and wine industries.
Collabria Care (formerly Napa Valley Hospice & Adult Day Services) supports individuals and their families facing the transitions of aging, chronic conditions, or the end of life. At Collabria Care, we are deeply grateful for every donation, award, and sponsorship we receive. Such contributions allow us to do the good work that provides care for over 2,500 residents each year, regardless of their ability to pay for our services.
